I’m adjusting a Web site for mobile devices (tablets & smartphones) with CSS adaptive technics.
In this site I use the fantastic OrganicTabs jQuery solution. I would like to adapt this tab solution for make it mobile devices friendly.
Can you tell me some ideas on how to achieve this?

Your question is way too broad for us to be able of offer any definitive answer.
Broadly, for responsiveness, think in percentages rather than fixed pixel values and use media queries as required.
However, a quick scan of the article (https://css-tricks.com/organic-tabs/) does seem to indicate that this is much of an issue other than (perhaps) adding touch support.
