I’m working on a photography website for a client and they asked specifically for a very minimalist approach. I’ve thrown together a design for a blog in addition to the portfolio. I’m happy with it and so is the client, but I just wanted a few more opinions just in case there’s anything else I can add , however, still maintaining the minimalist approach.
NOTE: I’m aware that the ‘date’ breaks very easily, this is just a design when I build the actual site it will be fully responsive.

I second this statement, to an extent. The reason I say to an extent is because the client does not always know what is best for them.
If you ask me, this blog looks nice but it is too minimal. I think it needs a little more.
Are you familiar with the ghost blogging platform? I think that would be a very nice, minimal blog your client could use.
