‘simple and elegant’ is really a matter of personal taste so you should probably go looking for templates yourself in order to make your own judgements.

But if you want to learn more about Bootstrap, the official documentation would be the most logical (to me) place to start http://getbootstrap.com/getting-started/ Over and above that its hard to comment because we don’t know what aspect of Bootstrap you want to learn about. Even if you were to tell us, I feel that it would just lead to suggestions to read X chapter of the docs.
