    I’m trying to figure out whether to use custom fields in a WordPress CMS site.
    It’s makes sense from my point of view, but as far as I can see it would make it more complex for a non technical client/user to upload images.

    Seems far easier for them to insert the image into a post using the media center, or am I wrong?
    I would welcome any suggestions?

    They can still use the media gallery thing to upload the photo, then you can make it so that they just need to copy the image’s link from the gallery into the custom field.

    Advanced:
    You could even add a meta box to allow users to select from a drop down list of images attached to the post
